🧄 The Making Process : Lal Mirch Bharwa Achar
Handpicked Red Chillies (Lal Mirch) : We select thick, medium-spicy red chillies—just the right kind that soften perfectly over time without losing their body or aroma.
Cleaning & Drying : Chillies are washed, patted dry, and kept under the sun to remove moisture—kyunki har kadam mein hai sabr ka swaad.
Careful Slitting & Deseeding : Each chilli is slit by hand and deseeded gently, making room for the magical masala stuffing.
Masala Preparation : We dry roast a mix of traditional Mithila spices—saunf, methi, kalonji, ajwain, hing, haldi, and more. These are ground coarsely and blended with rock salt and turmeric for a rich, textured stuffing.
Stuffing the Chillies : Each chilli is filled by hand with the warm masala blend, ensuring every bite is flavour-packed.
Sun-Drying : The stuffed chillies are spread out and sun-dried for several days. This slow aging deepens the taste and enhances shelf life naturally.
Preserving in Cold-Pressed Mustard Oil : Finally, the chillies are submerged in high-quality cold-pressed mustard oil (sarson ka tel) and allowed to rest—just like in traditional homes.
